It's the last day of summer and I decided to put this up because I'm sure your wondering about any recipe's you can do which is natural. I've decided to do this recipe because the way I make it is probably the easiest way to do it, so lets get cooking!
The first thing you'll need is 3/4 - 1 cup of acorn meal. You'll most likely have to go outside and get your acorns because there are not any at the super market. Get ONLY GREEN ACORNS. Most brown ones have wholes in them and have worms. Then open the shell. I live in the Northeast, and my acorns shells are soft and easy to open. All I have to do is stomp on it, and it comes right of. If you live in California, I've heard that most people have to use hammers. Experiment, and I hope the best of luck!
Once you've got your acorns you have to get all the tannic acid. If you don't, you can get stomach aces and I think diarrhea. The way to do this is to boil the acorns in water on the stove. The water will be dark red. Keep boiling until the water is clear. With my acorns it only takes about 5-7 times, but it can be very different, depending on where you live. Right now you have a choice. You can make acorn flour or grind it into tiny chunks, which is what I do because I like my pancakes a little chewy. But if you want to make flour, go online and see. I'm sure there many recipe's. Anyway, heres my way on how to make the small chunks.
Once that is done, dry the acorns in the sun or throughly in a dish towel. Then mash the acorns until they are mushy. Next put them in a coffee grinder. Grind until the acorns are in very small chunks.
That's it. Now lets make the pancakes! You can put them in a pancake mix, and mix them in with your pancakes or if you don't have any you can make actual pancakes. Here's the recipe I use when I have no mix. I got this from ''evergreenknits.blogspot.com'' and didn't use all the ingredients, so please look at the blog. Anyway here's what I did with the recipe . . .
2 1/4 cup flour
3/4 cup of acorn meal
3 1/2 tps of baking powder
2 tsp of salt
3 tblp of sugar
2 beaten eggs
1 tblp of melted butter
1 1/4 cup of milk
3/4 tps of vanilla
Mix the ingredients and cook them on a griddle until they're brown on both sides
I hope this is useful, and you try it. Right now I'm making acorn cake. I hope it works out so I can share the recipe with you.
